docs: sync test counts and which manifest-version note (EGB-700)

- CLAUDE.md: manifest.bats 77 -> 78 tests
- CLAUDE.md: note `secrets which` now prints the .secrets.json schema
  version in its manifest header line alongside `format: vN`
