chore: rewrite onboarding docs + bump version (v0.7.3.0)

README rewritten to the install.sh + init --remote + join flow; dropped the
macOS-only prerequisite (age+jq install hints now cover apt/dnf too). CHANGELOG
entry for EGB-671.
